So I’m really on the bliss balls wagon! In my quest for healthier “baking”, with less added sugar, these have been a life saviour, and the best part is, my boy, who “hates fruit” LOVES them, and doesn’t realise he’s eating fruit. This version so far has been my favourite.

1 cup sweetened cranberries
1/2 cup dates
1 cup cashew nuts (I have used a mix of cashews, walnuts and almonds, and this was good too)
2 TBSP cacao (in all honesty, I don’t have cacao, I used normal cocoa)
2 TBSP dessicated coconut
Extra coconut for rolling


What to do
Soak dates and cranberries in boiling water for about half an hour to soften. Drain.
Blitz nuts in the food processor until they are finely chopped up. Add remaining ingredients and blitz again until well mixed. Roll into balls and then roll in coconut, or cocoa if you prefer.

Pop in the fridge to set. That’s it! So easy!
